I have reviewed three wines from Foss Marai, all from Conegliano Valdobbiadene Prosecco. All are Glera. Scores range from 94 to 95, averaging 94; the highest is the Foss Marai “Strada di Guia” Valdobbiadene Prosecco Superiore Extra Dry (95 points). Foss Marai also features in two journal articles on this site.
Foss Marai is a premium name in a sea of Prosecco. Founded in 1986 by Carlo and Adriana Biasiotto in Guia, in the heart of Valdobbiadene, it is still run by the original family, and its motto, “Leniter in itinere” — slowly on the road — describes its approach. Rather than chase large-scale distribution, the house has chosen exclusivity, and its wines are found mostly in top restaurants.
Valdobbiadene is the historic heart of Prosecco Superiore and a UNESCO World Heritage landscape: steep, hand-harvested slopes at 300 to 500 metres, soils rich in carbonates, iron and manganese, and a cool climate that sharpens aromatics. Foss Marai works with low yields, its own selected yeasts and a slow, extended Charmat method with longer lees ageing, giving finer bubbles, richer textures and more aromatic complexity.
Strada di Guia, named after the historic road through the village, is an Extra Dry that balances freshness and softness. The Guia Millesimato Brut is drier and more mineral, with citrus, acacia and stone fruit. The Cartizze Dry comes from the tiny Cartizze area, the most prestigious vineyard in Valdobbiadene, and is generous and velvety, with golden apple, peach, honeysuckle and toasted almond.

Foss Marai is a distinguished Prosecco producer from Valdobbiadene DOCG, founded in 1986 by the Biasiotto family. Unlike mass-market brands, they emphasize quality and tradition, using slow carbonation and limited batches. Their Proseccos reflect terroir, focusing on low yields and natural yeast, making them a benchmark for artisanal sparkling wines in Italy.
