Ribolla Gialla

Friuli's ancient golden white—crisp and mineral in the traditional style, now also famous as the grape behind Collio's celebrated skin-contact orange wines.

Ribolla Gialla is a grape variety most associated in Italy with Friuli Colli Orientali, Collio Goriziano and Venezia Giulia. I have reviewed four wines made from it.

The Ancient White of Friuli Ribolla Gialla is a historic native white grape of Friuli in Italy’s north-east and the neighbouring hills of Slovenia, a variety of great antiquity that has become a flagship of the region’s celebrated skin-contact “orange” wine movement. Fresh and citrussy in its classic form, or deep and textured when made with extended skin contact, Ribolla Gialla is one of the most distinctive and fashionable whites of the Italian north-east.

Ancient Origins Ribolla Gialla has been grown in Friuli and the Gorizia hills since at least the Middle Ages, documented in records and prized for centuries as one of the region’s characteristic whites. Straddling the modern border between Italy and Slovenia, it is a grape of the historic Collio and Brda, deeply embedded in the winemaking culture of this borderland.

A Grape of the Collio Ribolla Gialla’s heartland is the Collio and Colli Orientali of Friuli, and the contiguous Brda hills across the Slovenian border, where the marl-and-sandstone ponca soils and hillside exposures give the wines their minerality and structure. This small cross-border zone is the spiritual home of the grape and of the orange-wine revival that has made it famous.

In the Vineyard A vigorous, late-ripening variety with thick skins, Ribolla Gialla is naturally suited to skin-contact winemaking, its robust skins providing colour, tannin and texture. It keeps good acidity, the foundation of both its fresh classic style and the freshness that balances the more structured macerated wines, and the best results come from low-yielding hillside vines.

Appearance and Structure In its fresh form Ribolla Gialla gives pale, bright, light to medium-bodied whites with high, crisp acidity and a lean, mineral structure. Made with extended skin contact, it becomes deeper in colour — amber or orange — with real grip, tannin and a textured, savoury palate, a completely different and compelling style of wine.

Aromatic Profile In the fresh style, the signature is citrus, green apple and white flowers with a stony, mineral edge. Skin-contact versions add notes of dried fruit, orange peel, herbs, nuts, honey and a savoury, almost tannic depth. The grape thus spans a remarkable aromatic range, from crisp and floral to rich, complex and oxidative.

In the Cellar Ribolla Gialla is made in two contrasting ways: as a fresh, steel-fermented dry white or sparkling wine, and as a skin-macerated “orange” wine, often fermented and aged in large oak or amphora with extended skin contact. The latter style, pioneered by the region’s natural-wine producers, has made the grape an icon of the movement.

Key Expressions

  • Collio & Colli Orientali (fresh style): crisp, mineral, citrussy dry whites.
  • Skin-contact “orange” wines: amber, textured, savoury wines from extended maceration.
  • Ribolla Gialla Spumante: fresh, lively traditional and tank-method sparkling wine.
  • Brda (Slovenia): the same grape across the border, central to the orange-wine tradition.

The Question of Aging Fresh Ribolla Gialla is best enjoyed young, while its crisp acidity and citrus are vivid, but the structured skin-contact wines can age impressively for many years, their tannin and oxidative complexity deepening into dried fruit, nuts, honey and savoury, tea-like notes.

At the Table The fresh style suits seafood, antipasti and lighter dishes, while the textured skin-contact wines are remarkably versatile food partners, standing up to white and even light red meats, cured hams, mushroom and spiced dishes, and aged cheeses in a way few whites can manage.

Why It Matters Ribolla Gialla is an ancient Friulian grape reborn as a modern icon — a variety that bridges Italy and Slovenia, and that, through both its crisp classic wines and its celebrated skin-contact “orange” expressions, has become one of the most distinctive and influential whites of the north-east.
